This week I’m sharing my latest meal plan with you. I’m so sick of never knowing what’s for dinner and ending up ordering take-out. It’s time I got my diet organised.
I like to theme my days. It makes the meal planning process easier for me. I’ll simply search “theme” recipes or low fat “theme” recipes online, and select from what’s available. I clip my recipes using One Note. I used to use Evernote, but it got really limited, so I switched. This method saves me from buying expensive cookbooks that I’ll only use one or two recipes from.
We’ve got a fair bit of pumpkin around at the moment – so this meal seemed perfect for my meal plan. I’m a pescatarian, so I’ll be replacing the bacon with mushrooms instead. It’s low fat and family friendly. The great thing about Skinny Kitchen is that you can find the Smart Points value too if you’re following the Weight Watchers plan like I am.
I love prawns, so this risotto is perfect for me. I’m using hard cheese in it with the goat’s cheese. Vegetarians had to be cautious with hard cheeses though as not all of them are vegetarian. Do your research before you buy. I hope the kids like this one. We’ve had varying responses with risotto.
Oh, I do love Mexican food. So it makes sense to add this yummy Mexican dish to this week’s meal plan. It’s a vegetarian meal, so no adaptations needed. Really easy to cook, making it the ideal mid-week meal. I’m really looking forward to this one! Add a salad if you want a side.
Meal: Veggie Burgers with Blue Cheese
OK, this is a bit of a cheat day. I’m going to have veggie burgers topped with salad and melted blue cheese. Really simple. But it’s Thursday, so why not?
Usually, on fish night, I’d go for a much more glamorous meal. However, this week I’m really in the mood for comfort food, as it’s been a tough month. So what’s better that a warming, yummy, tuna noodle casserole? A great way to round off the week.
Saturday is generally the day I reserve my weekly points for. However, this low-fat Chinese Fakeaway meal allows me to use them on a couple of glasses of wine and a yummy dessert. I’ll swap the chicken for a substitute like Quorn, but otherwise, this is a fairly easy recipe for me.
Another casserole? Sorry, I’m casserole mad at the moment. And my family day is all about sharing good hearty food together. We’ll put the casserole on the table and just help ourselves. Again, I’m using a vegetarian substitute for this one. Good healthy food that I know my kids will love.
